Blueberry Tart Ale
This lovely, soft, & tart beer used a mixed culture of lactobacillus and saccharomyces for fermentation. Then, for each gallon of beer we made, we added more than a pound of blueberry puree. And finally, we gave this beer our super secret ingredient: time. The simple sugars in the blueberry puree were slowly assimilated by our culture to not only create a shelf stable beer but to add additional complexity to the final product. The result is a menagerie, a super purple drink full of jammy, almost wine-like notes, summer blueberries, hints of vanilla float around in the background while the nostalgia of beers past lingers on your palate.
