Rustic Lager is our take on a keller-style beer, brewed with floor-malted Czech Pilsner malt and hopped with a mix of Polish Junga and Lubelski, including a generous late addition for extra character. It opens with a soft, pillowy aroma layered in citrus, hay, and just a touch of dry vanilla and wood, finishing with a firm, satisfying bitterness.

Unlike our usual 6 to 8 week lagering schedule, this one spent just four weeks in the tank. That shorter timeline preserves some of its raw charm while still letting the flavors come together.

The real story, though, is the yeast. It’s a long-forgotten strain recovered from the ruins of a defunct Milwaukee brewery and carefully revived by the folks at The Yeast Bay. It’s a lager with history, depth, and a little wildness at the edges.
